This cake has more chocolate than all it's other ingredients combined. 650g of Chocolate make this one rich cake, not for the person on a diet. Served with a scoop of ice-cream, this cake is delicious.

Ingredients:

185 g butter, softened
1/2 cup sugar
2 eggs
400 g Cooking Chocolate
1 1/4 cups self-raising flour
2 Tbsp Baking Cocoa
1/2 cup milk

Filling
50 g Cooking Chocolate
1/2 cup cream

Icing
200 g Cooking Chocolate
200 g butter, melted

Method

  1. Preheat oven to 180°C.
  2. Beat butter and sugar until creamy, beat in eggs one at a time. Beat in cooled, Dark Cooking Chocolate.
  3. Fold in sifted flour and Baking Cocoa alternately with milk. Spoon mixture into greased 20cm deep, round cake pan.

Filling

  1. Bake for 45 - 50 minutes until cooked. Remove from pan, cool on wire rack.
  2. Melt and cool 50g of the extra Dark Cooking Chocolate, combine with cream, beat until thick. Cut cake in half, sandwich cake with chocolate cream.

Icing

  1. Melt together remaining Dark Cooking Chocolate and butter, allow to cool, refrigerate until mixture is of spreading consistency, spread over cake.
  2. Decorate with bicuits, if desired.
