ANZAC Bickies |
These biscuits are absolutally delicious. I started making them a while a go as a fund raiser for scouts, and they are very popular. I recommend making a double batch, as they are sure to go quickly!

1512 ANZACS
| 1 cup rolled oats 1/2 cup S. R. flour 1/2 cup plain flower 3/4 cup coconut 3/4 cup sugar [raw, brown or white] |
1/2 teaspoon bicarbonate of soda 2 tablespoons boiling water 125g [4 oz] butter, melted 2 tablespoons golden syrup |
Mix all dry ingredients. Dissolve soda in boiling water and add to melted ubtter and golden syrup. Add to dry ingredients and mix well. Place in teaspoonfuls on greased slide or press into greased tray and cut into squares while still hot. Bake in moderately slow oven 325°F (160°C) for 15 mins.
Variations:
1. Nutties: Add 30g (1 oz) crushed nuts.
2. Rolled oat cookies: Add 30g (1 oz) sultanas or raisins.
3. Muesli biscuits: Omit 1 cup rolled oats, add 1 cup mueslie (R 1703)
